Our AI4GA ("AI for Georgia") project has been developing an AI elective
for Georgia middle school students that is available at
https://AI4GA.org.

A lot of this material could be adapted for high school or community
college use.  For example, we have a unit on speech recognition that
introduces waveforms, spectrograms, and the use of linguistic and
cultural knowledge to disambiguate ambiguous speech sounds.  There is an
online demo that lets students speak into their laptop's microphone and
see alternative transcriptions generated by the Google speech to text
service.

Similarly, there is a unit on word embeddings, a crucial component of
neural network based natural language processing, where students use an
interactive graphical tool to explore a 300-dimensional semantic feature
space.  Middle school students use the most basic features of the tool,
but older students could go into greater depth.
